错误应对:

看到这样的对话时,相信很多人都会大为恼火了,所以服务员怎么应对这也是一种技巧。饭菜中有异物往往是引起纠纷的原因之一,如饭里有小砂石等,这些小问题客人不满不会怎么表现出来,但像苍蝇、蟑螂和玻璃碎片等,这些就难以忍受而要抗议了。发现了一个问题,就应想到也许还有很多没有发现的问题,烹调时就必须注意了。那么,针对上面错误的应对方法,服务员应该怎么做呢?
服务策略:
遇到这种情况发生,一定要保持温和态度,听完客人的投诉,第一时间做出合理的道歉;为客人重新换到新菜,或者为他的这顿餐费打个折扣,或者赠送酒店的小礼品;如果客人不依不饶,就向上级申请下,能否退菜。
正确应对:

他们一共点了四道菜,便吩咐服务员上菜。

服务策略:
顾客提出的问题如果确实是事实,服务人员要敢于承认,勇于承认错误的服务人员会获得顾客的尊重,当然承认不足也是有技巧的,若确实不是,我们也要澄清事实。就本情景而言,餐厅不可能把别的客人吃剩的菜肴在给新来的客人食用,这是餐厅的大忌,可假如有客人提出这样的异议,我们一定要向客人澄清,说话注重语言技巧,并告知客人原因,让客人知晓。
正确应对:
服务员一:先生,这份虾是我们按照您的要求刚从海鲜池里捞上来的,而且我们也有严格的规定绝不能食用客人剩的食品,所以您根本不用担心,这可能是我们厨房离餐厅有一段距离,所以会比刚做好的要凉一些,要么我把这份虾加热一下,您看可以吗?
